Coconut varagu rice By

Ingredients

  • Varagu arisi [kodo millet] -2 cups [boiled]
  • Water – 3 cups
  • Coconut-1 cup [grated]
  • Ground nut – ¼ cup [roasted, peeled]
  • Mustard seeds- 2 tsp
  • Urad dal - 1 tsp
  • Bengal Gram-1 tbsp
  • Black pepper - 7
  • Green chillies-2 slit
  • Ginger- 1 inch smashed
  • Curry leaves- 2 springs
  • Asafetida a pinch
  • Oil-2 tbsp
  • Coconut oil - 1 tbsp
  • Salt to taste

Preparation

  • Wash & soak varagu arisi for 15 min. Then drain water.
  • Heat pressure cooker add 3 cups of water & soaked varagu arisi then cook for 3 whistles.
  • Then leave it for cool. Or Boil the rice in less water, spread over the plate to cool.
  • Heat oil in a pan then add mustard seed & let it splutter.
  • Then add Bengal gram, urad dal, green chilli, peppercorns, roasted ground nuts, asafetida, ginger and curry leaves one by one.
  • Add grated coconut and salt mix well. Add boiled rice and mix well.
  • Sprinkle coconut oil mix well then cut off heat. Serve hot.
