Chana masala recipe

Ingredients

  • White chickpeas – 1 cup [Boiled]
  • Tomato – 2 [chopped]
  • Cashew nut paste – ½ cup
  • Onion paste – 3 tbsp
  • Ginger garlic paste – 1 tbsp [each]
  • Green chilli- 1 [finely chopped]
  • Coriander leaves – 2 springs [chopped]
  • Channa masala – 1 tbsp
  • Cumin powder – ½ tbsp
  • Coriander powder – ½ tbsp
  • Turmeric powder – ¼ tsp
  • Red chilli powder – ½ tbsp
  • Cumin seeds – ½ tbsp
  • Sugar – ½ tsp
  • Salt to taste
  • Butter – 2 tbsp
  • Oil – 2 tbsp
  • Water as needed.
  • *Channa masala – Poppy seeds-1 tbsp, star anise- ¼ , cloves-2, green cardamom – 2, coriander seeds- ¼ tsp, cumin seeds-¼ tsp, dry red chilli – 1, pepper corn – 3, cinnamon stick -¼, cassia – ¼, bay leaves- ½ , fennel seeds-¼ tsp, black cardamom – 1
  • Dry roast all ingredients, then grid to smooth powder

Method

  • Heat butter & oil in a pan, add cumin seeds then add onion paste sauté till raw smell out.
  • Add ginger, garlic paste, & green chilli sauté gently. Then add tomatoes cook until the raw smell out. Add water if required.
  • Add boiled chickpeas mix well then add turmeric, red chilli powder, freshly ground channa masala powder, cover lid & cook it for 5 min.
  • Add cashew nut paste, coriander, cumin powder, salt & sugar mix well & let it boil.
  • Add chopped coriander leaves & cut of heat. Garnish with butter and serve hot with rice, or chapati.
