Carrot beans poriyal

Ingredients

  • Carrot – 1 cup [chopped]
  • Beans – ½ cup [chopped]
  • Onion – 1 [sliced]
  • Green chilli – 1 [slit]
  • Curry leaves – 1 spring
  • Coconut – ¼ cup [grated]
  • Mustard seeds – 1 tbsp
  • Bengal gram – 1 tbsp
  • Urad dal – 1 tbsp
  • Turmeric powder – ¼ tsp
  • Red chilli powder – ¼ tsp
  • Coriander powder -1 tbsp
  • Salt to taste
  • Oil – 2 tbsp
  • Water as needed

Preparation

  • Heat pan with oil add mustard seeds & let it splutter then bengal gram and urad dal. Then add onion sauté till soft.
  • Add 2 tbsp coconut, green chilli and curry leaves sauté.
  • Add carrot, beans & salt sauté. Then add coriander powder, turmeric powder & red chilli powder mix well. Add water cook till soft.
  • Finally add grated coconut, cut off heat & serve hot with rice.
