Broken red rice lemon upma

Ingredients

  • Broken red rice [Kerala matta rice, Sigappu arisi] – 2 cup
  • Onion – 1 [sliced or chopped]
  • Carrot – ½ cup [cut into cubes]
  • Coconut – 3 tbsp [Thinly sliced & chopped]
  • Green chilli – 1 [slit or chopped]
  • Ginger – 1 tbsp [finely chopped]
  • Coriander leaves – 2 springs [chopped]
  • Curry leaves – 1 spring
  • Mustard seeds – 1 tbsp
  • Bengal gram – 1 tbsp
  • Urad dal – 1 tbsp
  • Lemon juice – 2 tbsp
  • Oil – 2 tbsp
  • Salt to taste
  • Water as needed [Apr. 4 cups]

Method

  • Wash & soak broken red rice for 10 min. Then drain water. [optional]
  • Heat oil in a pressure cooker add mustard seeds& let it splutter.
  • Then add Bengal gram, urad dal sauté gently.
  • Add onion sauté well then add ginger, green chilli, & curry leaves.
  • Add carrot & coconut sauté well.
  • Add water and salt mix well & let it boil.
  • Then add broken red rice mix well, cover it and cook for 4 whistle.
  • Then add coriander leaves & lemon juice mix well and serve hot with coconut chutney, pickle or chips.
