Beetroot poriyal [stir fry]

Ingredients

  • Beetroot -2 [cut into cubes]
  • Onion – 1 [chopped]
  • Coconut – ¼ cup [grated]
  • Green chilli – 1 [sliced]
  • Curry leaves – 1 spring
  • Mustard seed – 1 tbsp
  • Bengal gram – ½ tbsp
  • Urad dal – ½ tbsp
  • Turmeric powder – ¼ tsp
  • Red chilli powder – ½ tbsp
  • Oil – 2 tbsp
  • Salt to taste
  • Water as needed

Preparation

  • Boil beetroot with salt.
  • Heat pan with oil add mustard seed, Bengal gram, urad dal and onion sauté till soft.
  • Add green chilli and curry leaves. Add turmeric powder and red chilli powder mix well.
  • Then add boiled beetroot sauté well. Then add coconut mix well. Cut off heat & serve hot with rice
