Barley payasam


Cuisine Style: Tamil Nadu, South india | Cooking Time: 15 to 20 min | To Serve: 4 | Type: Sweet, dessert, diwali special sweet, kheer, payasam

Ingredients

  • Barley - 1 cup
  • Milk - 2 cups
  • Water – 1 cup [optional]
  • Saffron – few
  • Jaggery – ¾ cup
  • Green cardamom powder - ½ tbsp
  • Cashew nuts - 3
  • Raisins - 6
  • Pistachio - 4
  • Ghee - 1 tbsp

Preparation

  • Dry roast barley. Leave it for cool & put it in a blender coarsely grind. Then wash & soak for 2 hours.
  • Heat pan with ghee then roast cashew nuts, raisins, & pistachio keep it aside.
  • In the same pan add milk, water, barley & cook till soft [apr 15 to 20 min]. Then add saffron & jaggery mix well.
  • Add ghee roasted cashew nut, raisins, & pistachio slices.
  • Finally add cardamom powder mix well &cut off heat. Serve hot or cold.
